Sometimes restaurateurs want to open a venture that reminds them of their roots.
But other times,
it's a journey somewhere illuminating that reveals to them which cuisine should be the focus of their attention.
For Diana Militski, that place was Georgia.
Given her Eastern European heritage,
she had a particular fondness for hearty dumplings and ingredients that reminded her of her childhood.
But when it came to opening an ode to this cuisine back in London,
she realized it was important not just to emulate tradition.
Many wine lovers may by now be very familiar with Georgian orange bottles,
and the nation's most popular dishes have begun travelling across the continent.
